In this article, we will learn how to make  the yummiest sindhi biryani.

Sindhi Biryani:

Ingredients:

1. Oil ½ Cup

2. Pyaz (Onion) sliced 3 medium

3. Adrak lehsan paste (Ginger garlic paste) 1 tbs

4. Chicken ½ kg

5. Sabut kali mirch (Black pepper corns) 8-9

6. Baadiyan ka phool (Star anise) 1

7. Darchini (Cinnamon sticks) 2

8. Laung (Cloves) 4-5

9. Badi elaichi (Black cardamom) 1

10. Hari elaichi (Green cardamom) 4

11. Zeera (Cumin seeds) 1 tsp

12. Lal mirch powder (Red chili powder) 1 & ½ tsp or to taste

13. Haldee powder (Turmeric powder) ½ tsp

14. Garam masala powder 1 tsp

15. Zeera powder (Cumin powder) 1 tsp

16. Dhania powder (Coriander powder) 1 tsp

17. Namak (Salt) 1 & ½ tsp or to taste

18. Tez paat (Bay leaf) 1

19. Dahi (Yogurt) ¾ Cup

20. Tamatar (Tomatoes) cubes 3 medium 

21. Hari mirch (Green chilies) 4-5

22. Aloo Bukhara (Plums) 5-6

23. Hara dhania (Green coriander) handful

24. Podina (Mint leaves) handful

25. lemon juice 2 tbs

26. Chawal (Rice) Basmati sella ½ kg (soaked and boiled with whole spices & salt)

27. Aloo (Potatoes) boiled 2-3

28. Pyaz (Onion) fried

29. Lemon juice 2 tbs

30. Zarda ka rang (Yellow food color) ½ tsp

31. Pyaz (Onion) fried

32. Oil 1 tbs

Directions:

Step 1: In pot,add oil,onion and fry until golden brown,take out half quantity of fried onion & set aside.

Step 2: In remaining fried onion,add ginger garlic paste and mix well.

Step 3: Add chicken and fry until chicken changes color.

Step 4: Add black pepper corns,star anise,cinnamon stick,cloves,black cardamom,green cardamom,cumin seeds,red chili powder,turmeric powder,garam masala powder,cumin powder,coriander powder,salt, bay leaf and yogurt,mix well & cook for 4-5 minutes.

Step 5 : Then Add tomatoes and mix well.

Step 6: Add green chilies,plums,green coriander,mint leaves and mix well.

Step 7: Cover and cook for 6-8 minutes.

Final step: Take out half quantity of cooked chicken & gravy and set aside,add lemon juice,cooked rice,boiled potatoes, remaining cooked chicken,fried onion,lemon juice,remaining cooked rice,water,yellow food color,fried onion and drizzle oil,cover and steam cook for 10 minutes.

 دارچینی 2 عدد

 لونگ  5- 4عدد

 بڑی الائچی 1 عدد

 ہری الائچی 4 عدد

 زیرہ 1 چمچ

 لال مرچ پاؤڈر1+ 1/2 چمچ 

گرم مصالحہ پاؤڈر 1 چمچ

 زیرہ پاؤڈر 1 چمچ 

لال مرچ دھنیا پاؤڈر 1 چمچ 

نمک 1+1/2 کھانے کا چمچ 

تیز پات ایک

 دہی تین چوتھائی کپ

 ٹماٹر تین درمیان سائز

 ہری مرچ 4-5 عدد 

الو بخارہ پانچ سے چھ عدد

 ہرا دھنیا

 پودینہ ،لیمن جوس دو چمچ

 چاول باسمتی سیلا ادھا کلو

 آلو 2-3 عدد ابلے ہوئے 

پیاز فرائیڈ 

زردے کا رنگ ادھا چمچ 

آئل ایک کھانے کا چمچ 


:ہدایات

ایک برتن میں آئل اور پیاز ڈال کر گولڈن براؤن فرائی کر  لیں فرائیڈ پیاز کی ادھی کوانٹٹی باہر نکال کر سائڈ پر رکھ دیں

 باقی فرائیڈ پیاز میں ادرک لہسن پیسٹ ڈال کر اچھی طرح مکس کر لیں چکن شامل کریں اور چکن کا رنگ تبدیل ہونے تک فرائی کر لیں

 ثابت کالی مرچ، بادیان کا پھول، دار چینی، لونگ، بڑی الائچی، ہری الائچی، زیرہ، لال مرچ پاؤڈر ،ہلدی پاؤڈر، گرم مصالحہ پاؤڈر، زیرہ پاؤڈر ،دھنیا پاؤڈر، نمک، تیز پات اور دہی ڈال کر اچھی طرح مکس کریں۔ اور چار سے پانچ منٹ تک پکا لیں

 ٹماٹر ڈال کر اچھی طرح مکس کر لیں

ہری مرچیں ، آلو بخارا ، ہرا دھنیا اور پودینہ ڈال کر اچھی طرح مکس کر لیں ۔

ڈھک کر 6-8 منٹ کے لیے پکا لیں ۔

پکے ہوئے چکن اور گریوی کی آدھی مقدار کو باہر نکال کر رکھ لیں ،لیمن جوس ، ابلے ہوئے چاول اور آلو ، بقیہ چکن ، فرائیڈ پیاز ،لیمن جوس ،باقی بچے ہوئے چاول ،پانی ، زردہ کا رنگ ، فرائیڈ پیاز اور آئل ڈال دیں ، ڈھک کر 10 منٹ کے لیے دم دے دیں ۔
